Tuscan Chicken With Tomatoes And Rice

ingredients
2 bags boil-in-bag white or brown rice
4 boneless, skinless chicken breasts, cut into 1-inch pieces, seasoned
1 small red onion, sliced
1 jar (4.5 ounce size) sliced mushrooms, drained
1 can (14.5 ounce size) Italian-style stewed tomatoes
directions
Prepare rice according to package directions and set aside.
In a medium oiled skillet, over medium heat, brown chicken pieces. Add remaining ingredients. Cover and simmer for 5 to 7 minutes. Serve over bed of hot rice.

Very easy recipe to follow. I would add aditional seasonings such as basil, salt and pepper. I would also add some shredded mozzarella or provolone to the skillet when done cooking, and let it rest covered for a few minutes to melt a little.
