It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

An all-purpose taco filling made with ground beef, refried beans, brown rice, and salsa. Freezes well.

1 pound ground beef
1 can refried beans or pinto beans (see note)
1 green pepper, chopped
3/4 cup brown rice
3/4 cup water
1 cup prepared salsa
1 packet taco seasoning mix
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/4 teaspoon seasoned salt
NOTE: If you are using a can of pinto beans, put them in a fry pan with a tablespoon of oil over medium heat, stirring often and mashing the beans with your spoon or spatula. Add the taco seasoning at this time. Cook until thickened and add to the crock pot.
Mix the taco seasoning and the refried beans in the crock pot. Add the rice, water, and salsa.
Brown the ground beef with the green pepper, seasoning with the garlic powder, pepper, and seasoned salt. Drain off grease and add beef to the crock pot.
Give everything a good stir and turn to high heat for four hours. Use the mixture to fill taco shells, over chips, or inside flour tortillas.
