Even cranberry sauce leftovers can be repurposed in this delicious taco recipe. Jellied cranberry sauce is mixed with chili sauce and ground beef to create a zesty taco filling.

serves/makes:

ready in:
  under 30 minutes

ingredients

2 pounds ground beef
1 cup diced onion
2 teaspoons minced garlic
1 bottle (12 ounce size) chili sauce
1 cup jellied cranberry sauce
1 package (1.25 ounce size) taco seasoning mix
12 flour or corn taco shells

directions

Heat a large skillet over medium-high heat. Add the beef, onion, and garlic. Cook, stirring frequently, until the beef is cooked, about 6 minutes. Drain off any excess grease and return the pan to the heat.

Add the chili sauce, cranberry sauce, and taco seasoning to the beef. Reduce the heat to medium low and cook, stirring occasionally, for 10 minutes or until the sauce has thickened.

Spoon the taco filling into taco shells and top each with desired taco toppings.

recipe tips

For a healthier version, use whole wheat or low-carb taco shells.

Consider adding beans to the filling for extra fiber and protein.

Garnish with fresh cilantro or a squeeze of lime for added freshness.

Pair these tacos with a side of Mexican rice or a simple green salad for a complete meal.

Experiment with different types of taco shells, like blue corn or hard shell, for variety.

common recipe questions

What type of ground beef works best for this recipe?

Lean ground beef (around 85-90% lean) is ideal as it provides enough fat for flavor but not too much grease.

Can I use a different type of meat?

Yes, ground turkey or chicken can be used as a lighter alternative. The cooking time may vary slightly.

How can I make this recipe vegetarian?

You can substitute the ground beef with a plant-based ground meat alternative or cooked lentils.

Is it possible to use fresh cranberries instead of jellied cranberry sauce?

Fresh cranberries would need to be cooked down with sugar to create a similar consistency and sweetness to jellied cranberry sauce.

What are some recommended taco toppings?

Shredded lettuce, diced tomatoes, shredded cheese, sour cream, and avocado are great toppings for these tacos.

Can the taco filling be made ahead of time?

Yes, the filling can be made ahead and refrigerated in an airtight container for up to 3 days. Reheat it on the stove or in the microwave before serving.

Can I freeze the taco filling?

The beef filling can be frozen in an airtight container for up to 3 months. Thaw in the refrigerator before reheating.
