Serve this Tex-Mex ranch-style taco filling made with ground beef and ranch beans in crispy taco shells or spoon it over tortilla chips for a nacho-like dinner. You can easily make the filling ahead of time and reheat it before serving or keep it warm in a crock pot. You can even serve this as a dip with tortilla chips or make it into a taco salad.
1 pound ground beef
1/2 cup chopped onion
salt and pepper, to taste
1 tablespoon mild or hot chili powder
1 can (15 ounce size) ranch-style beans, undrained
1/2 cup French salad dressing
1 small tomato, diced
1/2 cup water
To Serve
1 package taco shells or large tortilla chips
shredded lettuce
chopped onion
diced tomato
shredded Cheddar or Monterey Jack cheese
Heat a large skillet over medium heat. Add the ground beef and onion and cook until the meat is no longer pink. Drain off any excess grease. Stir in the salt, pepper, and chili powder.
Add the beans, French dressing, diced tomato, and water. Stir to combine and let simmer for 15 minutes uncovered, stirring occasionally.
To serve: spoon the beef mixture into taco shells and top with shredded lettuce, onion, tomatoes, and shredded cheese. Or to serve "nacho" style, spread large tortilla chips out on a platter and top evenly with the beef mixture. Top the beef with the shredded lettuce, onions, tomatoes, and cheese as desired.

I made these last night and they were very good. My husband is hard to cook for because he's a picky eater, but he went back for seconds. I did add an extra can of beans and simmered for about 30 minutes. Will definitely make again :)
