Irish Tacos

Shepherd's pie served in taco shells!. Ground beef is simmered with vegetables, Guinness, and Jameson whiskey, then piled into taco shells, and topped with cheesy mashed potatoes.

1 tablespoon butter
1 pound ground beef
1/2 cup shredded carrots
1/2 cup diced peppers
1/4 cup diced onion
1/4 cup Guinness
1/4 cup Jameson
1 cup beef gravy
Kosher salt
pepper
1 cup mashed potatoes (leftover or instant, warm)
1 cup shredded cheddar cheese
6 taco shells

directions

Saute the beef, carrots, peppers and onions over medium heat for about 5 minutes.

Add the Guinness, Jameson, gravy, salt and pepper and reduce to a simmer until the liquid is almost gone, about 4-5 minutes.

Divide the meat mixture between the taco shells. Top with the mashed potatoes and the cheese.

    These were good, sort of like eating shepherd's pie from a taco shell. The Guinness and Jameson imparted an interesting note of flavor to the meat filling. I think these were the first tacos I've had that weren't of the spicy variety.

    I took this one step further and used ground lamb. Great recipe! Seems weird to be eating the flavor combos in a taco shell but we had fun with it
