Crab Alfredo Recipe

INGREDIENTS:

1 package (16 ounce size) penne pasta or medium tube pasta
1/2 cup chopped onion
1/4 cup butter
16 ounces sour cream
1 can (10.75 ounce size) condensed cream of mushroom soup, undiluted
1/2 cup milk
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 teaspoon black pepper
2 packages (8 ounce size) imitation crab meat, flaked
1/4 cup grated Parmesan cheese
2 tablespoons minced fresh parsley


DIRECTIONS:

Cook pasta according to package directions.

Meanwhile, in a large skillet, saute onion in butter until tender. Whisk in the sour cream, soup, milk, salt, garlic powder, Italian seasoning and pepper until blended. Cook and stir until heated through (do not boil). Stir in crab; heat through.

Drain pasta; top with crab sauce. Sprinkle with Parmesan cheese and parsley.

Ok. I just made this. Of course, I doctored it a bit. I added a little of each, white & red onions, bell peppers (red, green, yellow, orange), green onion, used half the sour cream, and replaced with a cup of heavy cream. I also added about 3/4 cup of shredded parmesan to the sauce. It was a bit sweet after all the imitation crab meat, (good for me, not quite the mrs.) so added in a good bit of ground peppercorn and sea salt, ground red pepper, some Tonys Creole seasoning and a capful of Crab Boil. Now it is AWESOME with a little bit of a kick! Thanks for the Beginning of an awesome recipe Hope this helps anybody else.

Made this last evening - spur of the moment "thing" - Finished and served dinner with salad and baked brownies in about 40 minutes - Guests rated it wonderful - most had second helpings.
