1 tablespoon reduced calorie margarine
2 tablespoons chopped onion
1/4 cup chopped mushrooms
1/4 cup diced lean ham
2 large eggs, lightly beaten
1/2 cup egg substitute
Melt margarine in a medium skillet. Add onion and cook until almost soft. Add mushrooms and cook through. Stir in the ham.
Add eggs, salt and pepper. Cook, stirring frequently, until almost set.
