1/2 cup balsamic vinegar
1/3 cup olive oil
1 teaspoon sea salt or kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon dried thyme
1 tablespoon dried oregano
Combine all the ingredients in a non-reactive container or zip-top plastic bag. Mix well. Add vegetables that have been sliced as desired for grilling. Seal the bag and mix well. Let marinate at room temperature for 30 minutes (or in the refrigerator for 1-4 hours).
Remove the vegetables from the marinade and grill as desired.
