20 ounces 99% lean ground turkey breast
1/8 teaspoon cayenne pepper
2 teaspoons rubbed sage
3/4 teaspoon salt
1/4 teaspoon black pepper
Combine the ground turkey, cayenne, sage, salt, and pepper in a bowl. Mix well then form the mixture into equal-sized patties. Place on a plate or platter and cover with plastic wrap. Place in the refrigerator overnight. The patties can be frozen at this point, if desired. Thaw in the refrigerator before cooking.
Lightly grease a skillet and place over medium-high heat. Add the patties in a single layer and cook, turning as needed, until cooked through and the juices run clear.
Serve immediately.
