Want to spice up your breakfast bacon? Try baking it with coarsely ground black pepper sprinkled on it. Delicious!
1 1/2 pound sliced lean bacon
2 1/2 teaspoons coarsely ground black pepper
Preheat the oven to 400 degrees F.
Place the bacon in a single layer in a shallow roasting pan or rimmed baking sheet.
Sprinkle the pepper evenly over the bacon slices. Place the pan in the oven and bake at 400 degrees F for 25 minutes or until the bacon is crisp and browned.
Remove the bacon from the pan and place on paper toweling to drain. Serve immediately or store in the refrigerator. The bacon can also be frozen after baking and cooling.

Couldn't be simpler. If you like bacon and you like cracked pepper (I like a lot of pepper sprinkled on meat), you will enjoy this quick recipe. The thick-cut strips reminded me of the peppered beef jerky that I enjoy as a snack.

I used thick-sliced bacon and didn't really measure the pepper but just cranked the mill over the bacon on the pan until it was nicely coated. The bacon was done perfectly in 20-25 minutes (most of the bacon pieces were done at 20 minutes but a couple of them took the full 25 minutes to cook). The black pepper adds flavor but doesn't overpower the bacon. VERY tasty!!
