These homemade sausage patties with pork and sage put store-bought to shame. Perfect for breakfast egg sandwiches. Great for a low-carb diet, or not!

1 pound ground pork
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 teaspoon rubbed sage
1 1/2 teaspoon garlic powder
1 1/2 teaspoon onion powder
2 teaspoons cayenne pepper
1 1/2 teaspoon salt
1 teaspoon paprika
1 tablespoon hot pepper sauce, or to taste
1 tablespoon low-carb bread crumbs, optional
Place the pork in a bowl. Sprinkle with the remaining ingredients and then mix well. Place the bowl in the refrigerator for 5 minutes.
Heat a lightly greased cast iron skillet over medium-high heat.
Form the sausage mixture into equal-sized patties. Place the patties in the heated skillet and cook, turning as needed, until browned and cooked through.
The patties can also be frozen before or after cooking.
