Turn last night's roast beef dinner into today's breakfast. Roast beef, potatoes, and onion make a hearty meal. Make it extra delicious with a fried egg on top.
serves/makes:
ready in: 30-60 minutes
ingredients
2 cups cubed, cooked roast beef 2 cups cubed, cooked potatoes 1/3 cup diced onion salt and pepper, to taste 1/3 cup milk 2 tablespoons butter
directions
Combine the roast beef, potatoes, onion, salt, pepper, and milk in a bowl. Mix gently.
Add the butter to a skillet over medium heat. When melted, add the roast beef hash to the skillet and spread it evenly. Reduce the heat to medium-low and cook, without stirring, until the bottom is lightly browned, about 30 minutes.
Serve the roast beef hash hot with a fried egg on top, if desired.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

Ah, the unassuming envelope of onion soup mix. It's more than just for onion soup (or dip). It adds tremendous flavor (and convenience) in all these recipes.
