2 tablespoons peanut butter
1/8 teaspoon chili paste
1/8 teaspoon red Thai curry paste
2 teaspoons sugar
2 tablespoons coconut milk
1 tablespoon lime juice
1 tablespoon soy sauce
Mix the peanut butter, chili paste, red curry paste, and sugar in a small bowl until smooth.
Whisk in the coconut milk, lime juice, and soy sauce until completely blended and the mixture is creamy.
Serve immediately.
Mixture can be stored in a covered container in the refrigerator for up to 2 days. Let come to room temperature and whisk well before serving.

I loved this sauce!! I made chicken kabobs and they were great. I also bought the appetizer size chicken and pineapple kabobs and they were amazing with it. The only thing I changed in the recipe was the soya. I did not put as much. I find soya over powering. I put half the recommended amount of the soya and the other half with Hoi Sin sauce. I also tried using Organic Peanut Butter and I found I had to add more then the amount says because you do not get a nice peanut taste in it. I like also using Sweet Chili sauce rather then chili paste. My 3 year old daughter loved it. It had a little spiciness to it because of the chili sauce and the curry paste, but perfect!! Can't wait to make it again!!!
