Regular fluffy white rice is fine for most dishes, but it can't match the decadence of this parmesan rice. Thick and creamy, it's a great substitute for risotto if you don't feel like putting in the effort but still want an exquisite side for some fish or roast chicken.
1 cup long grain rice
OR
2 cups instant rice
1 can (12 ounce size) evaporated milk or whole milk
1 tablespoon cornstarch dissolved in a little water
2 tablespoons butter
1 teaspoon salt
1 cup shredded real Parmesan cheese
Prepare rice according to directions.
To make sauce, whisk the milk and dissolved cornstarch in a medium-sized saucepan. Add the butter and salt and stir over medium-high heat.
When butter has melted, add the cheese. Stir until cheese has melted and the sauce has thickened. When rice is ready, combine rice and sauce. Stir well.
