2 tablespoons minced fresh cilantro
3 cups cooked rice (brown or white)

directions

With a fork, stir the lime zest, lime juice, and cilantro into the cooked rice. Serve hot or cold.

    We used brown rice and served the recipe warm. The lemon flavor was subtle (too many recipes go overboard with the citrus flavors). We served it with a spicy Mexican-flavor entree and it complemented it very well.
