2 tablespoons canola oil
1 cup thinly sliced onions
1/2 cup chopped red bell pepper
4 cloves garlic, minced
1/2 tablespoon grated ginger
1 pound coarsely chopped bok choy
1/2 pound sliced mushrooms
2 tablespoons fresh lemon juice
1 tablespoon soy sauce
1 teaspoon granulated sugar
Heat the oil in a large heavy skillet over medium-high heat. Add the onions, pepper, garlic, and ginger. Stir-fry for about 1 minute. Add the bok choy and mushrooms; stir-fry for about 1 minute. Add the lemon juice, soy sauce, and sugar. Stir-fry for about 2 to 3 minutes, until done.

Trying to fill up on vitamin K for my last weeks of pregnancy and this recipe is delicious. First time cooking with bok choy in such large amounts. I sub'd the sugar for honey and added some chili paste to give it a spicy taste. My picky eater husband loved it too :) Bonus

this was very tasty! i love the lemon/ginger bite. i also added rice and tofu to make a complete meal

This was fresh and tasty, although we only added half the lemon juice called for (2 tablespoons just seemed like it would overwhelm the dish).
