Chicken On Mushroom Rice For A Crowd

ingredients
8 cups raw rice
50 chicken quarters
75 ounces cream of chicken soup
2 cups skim milk
2/3 cup onions, diced
1/2 teaspoon salt
1 can (#303 size) mushrooms, sliced
margarine
directions
Cook rice until done. Divide into pans.
Mix with soup, milk, salt, mushrooms and onions, pour over rice and mix. Place chicken parts over rice mixture. Brush chicken parts with melted margarine. Bake covered with foil for 1 hr at 350 degrees F.
Uncover and bake 30 minutes longer or until chicken is brown.
