This eggnog won't linger on your hips! It's made with skim milk to cut calories and uses a sugar substitute and vanilla extract to add sweetness. Despite it being a healthier version of the popular holiday drink, it still is rich and delicious.

2 eggs, separated
4 cups skim milk
1 teaspoon vanilla extract
2 teaspoons sugar substitute
1/4 cup brandy
1 dash grated nutmeg
Combine the egg yolks and milk in a heavy saucepan over medium heat. Cook, stirring constantly, until the mixture is thick enough to coat the back of a spoon. Remove from the heat and let cool completely.
Meanwhile, beat the egg whites with an electric mixer until soft peaks form. Fold the egg whites into the cooled egg mixture. Stir in the vanilla, sugar substitute, and brandy. Mix gently. Place the eggnog in the refrigerator until well chilled.
To serve, pour the eggnog into serving cups and sprinkle each serving with grated nutmeg.
