Cranberry, Goat Cheese And Avocado Salad

ingredients
1 head romaine lettuce
2 avocados, peeled, seeded, sliced
1/2 cup dried cranberries
1/2 cup honey roasted cashews
1 slice (1/4-inch thick) goat cheese
DRESSING
1/2 cup oil
2 tablespoons white vinegar
1 tablespoon orange juice
1 tablespoon cranberry juice
2 drops Tabasco sauce
1 tablespoon Dijon mustard
3 tablespoons sugar
directions
Wash and clean lettuce, break into bite-size pieces. Add the avocados and cranberries. Chop the cashews and dredge the goat cheese slices in the cashews and chill before serving.
DRESSING: Whisk all the ingredients in a jar or bowl and store until ready to use.
Toss the greens, avocados and cranberries with the dressing. Top each serving of salad with the chilled goat cheese crouton.
