Salad
1 package (5 ounce size) spring mix lettuce salad
1 package (10 ounce size) chopped hearts of Romaine lettuce
1 cup candied walnuts
1/2 cup dried cranberries
1 Fuji or Gala apple, diced
2 packages (4 ounce size) crumbled Gorgonzola or Blue cheese
Dressing
1/4 cup canola oil
2 tablespoons water
2 tablespoons rice vinegar
1 tablespoon sugar
1/2 teaspoon dried parsley
1/2 teaspoon dried basil
directions
Place the spring mix and romaine lettuce in a large bowl. Add the walnuts, cranberries, and diced apple.
In a small bowl, whisk together the oil, water, rice vinegar, sugar, parsley, and basil until well blended.
Drizzle the dressing over the salad mixture. Add the blue cheese crumbles and toss to combine all the ingredients.
Serve immediately.
