ingredients
1 3/4 cup shredded coconut
1/3 cup vegetable shortening
2 cups all-purpose flour
1 teaspoon baking powder
1 cup granulated sugar
1 large egg, lightly beaten
1 lime, grated zest and juice of

Preheat the oven to 350 degrees F. Butter four cookie sheets.
Sift the flour, baking powder, and salt into a medium bowl.
Beat the shortening and sugar in a large bowl with an electric mixer at high speed until creamy. Mix in the coconut and lime zest and juice. Add the egg, beating until just blended. Mix in the dry ingredients.
Drop teaspoons of the dough onto the prepared cookie sheets. Use a floured fork to press the cookies into thin wafers.
Bake, one sheet at a time, for 6-8 minutes, or until golden. Cool on the sheets until the cookies firm slightly. Transfer to racks to cool completely.
