Onion rings are so delicious, but you know...fried. Not exactly guilt-free snacking. Until now, that is. These oven-baked, buttermilk-battered onion rings deliver that craveable, crispy exterior without all the oil.
3 large onions, peeled, sliced 1/4 inch thick
1 cup buttermilk
nonstick vegetable cooking spray
1/2 cup all-purpose flour
1 teaspoon paprika
1/2 teaspoon salt
4 egg whites
1 1/2 cup cornflake crumbs
Separate onions into rings and mix with buttermilk in large bowl; toss to coat. Set aside 20 minutes, tossing occasionally.
Heat oven to 375 degrees F. Spray two baking sheets with nonstick vegetable cooking spray.
In shallow dish stir flour, paprika and salt. In second shallow dish, place egg whites. Lightly beat with fork. In third shallow dish, place cornflake crumbs. Dip each onion ring in flour mixture, then egg whites, then cornflake crumbs to coat on all sides. Place in single layer on prepared sheet.
Spray onion rings with nonstick vegetable cooking spray. Bake in batches 15 minutes or until golden. Serve immediately.

I have tried many "oven fried" recipes but I have to say this one for onion rings was the best. Even my husband loved it. I'm going to try it again tonight only I'm going to use green tomatoes.
