A new twist to bagels and lox. Warm bagels are topped with an avocado spread, rocket or mixed salad greens, cucumber, smoked salmon, and capers.
4 bagels, unsliced
2 small avocados
1 tablespoon lime juice
freshly ground black pepper, to taste
1 tablespoon chopped fresh dill
fresh rocket or mixed lettuce
1 seedless cucumber, finely sliced
8 slices smoked salmon
1 tablespoon capers
extra fresh dill for garnish
Preheat the oven to 375 degrees F.
Place the whole bagels in the oven (on the rack directly or place on a baking sheet) and heat at 375 degrees F for 4-5 minutes or until hot. Remove the bagels from the oven and when cool enough to handle, slice them in half with a serrated bread knife.
Slice the avocados in half and remove the pits. Scoop the avocado flesh into a bowl. Add the lime juice, black pepper, and dill. Mash well with a fork.
Spread the cut sides of the bagel halves with the avocado spread. Top each with a couple of rocket leaves and cucumber slices. Divide the smoked salmon between the bagels. Garnish with the capers and extra dill, if desired.
Serve the avocado and salmon bagels immediately.

Yes, you can use sliced bagels. We'd recommend keeping the halves together when heating them as the idea is to warm the bagels, not toast them, and this will help keep the cut-sides of the bagels from getting dried out.
If you'd prefer a crunchier bagel you certainly can toast them instead of heating them (they are delicious both ways!)

These were a nice change of pace for breakfast. Super easy to make, and they just seemed healthier than regular bagels with cream cheese--even though I know that avocados are sort of fattening too.

I can't even begin to tell you how much I loved this recipe! I grew up with the old bagels and lox with cream cheese. Sub in an avocado spread for the cream cheese, some veggies, and WOW! This makes a great sandwich for breakfast or anytime.
