Salmon Mayo Wrap

ingredients
1 can (7.5 ounce size) red or pink wild salmon
3 ounces canned sweetcorn
1/2 large cucumber, finely chopped
4 tablespoons fat reduced mayonnaise
2 large flour tortillas
chopped lettuce leaves
salt and freshly ground black pepper
directions
Drain the salmon, reserving the liquid. Remove any skin and bones, if desired, then break the salmon into large chunks. Set aside.
Mix the sweetcorn, cucumber and mayonnaise together. Gently stir in the salmon chunks. Season with a little salt and pepper.
Lay the wraps on a flat surface and spread an equal amount of filling over each one. Add a few chopped lettuce leaves, then roll up firmly. Slice in half and wrap in foil or saran wrap.
