Celery Casserole

30-60 minutes
ingredients
3 cups thinly sliced celery
1/2 cup sliced water chestnuts
1/2 cup sliced mushrooms
1/4 cup slivered almonds
1/2 cup cracker or bread crumbs
1/2 cup freshly graded Parmesan cheese
5 tablespoons butter, divided
3 tablespoons flour
1 cup chicken broth
3/4 cup milk
directions
Boil celery for 5 minutes. Drain and put in a greased 2 qt. casserole with almonds and water chestnuts.
Melt 3 tablespoons of the butter with flour, making a roux. Slowly stir in broth and milk. Simmer for 5 minutes, stirring constantly. Add mushrooms and pour over celery mixture. Stir.
Melt the remaining 2 tablespoons of butter and mix in crumbs and cheese, then sprinkle over mixture. Bake at 350 degrees F until hot and bubbly, about 20 minutes.
