Red Rice

ingredients

5 slices bacon
1 large onion, chopped
2 cans (16 ounce size) chopped peeled tomatoes, undrained
1 cup uncooked converted long grain rice
1 cup finely chopped cooked ham
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon hot sauce

directions

Fry bacon in skillet. Remove bacon and crumble. Cook onion in bacon drippings over medium high heat until tender.

Combine bacon, onion, tomatoes with juice, rice, ham and seasonings in crock pot. Cover and cook on low 6 to 8 hours or on high 3 to 4 hours. Serve warm

NOTE: If hotter rice is desired, add more hot sauce to taste.
