It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

This Polish Kutia combines cracked wheat with poppy seeds and a mix of roasted hazelnuts and walnuts for a hearty, nutty side.

1 cup cracked wheat grains
2 cups salted water
8 ounces poppy seeds, unprepared
1/2 cup hazelnuts, seeded, roasted & coarsely chopped
1/3 cup walnuts, seeded, roasted & coarsely chopped
1/2 cup golden raisins
1/4 cup honey
1 teaspoon almond extract
Rinse the grain and simmer covered in salted water, stirring occasionally, until tender, about 2 hours, adding a little water if necessary to keep it from sticking to the bottom.
When cool, mix it with the remaining ingredients. Keep refrigerated. (Not more than 24 hours; it will ferment.)
