This homemade pineapple-infused liqueur is gonna seriously up your tropical cocktail game. It's really simple to make as well, so it might just be your gateway into any number of infused fruity and herbal liqueurs.
2 cups sliced fresh pineapple
2 cups vodka
1/2 cup sugar syrup (simple syrup)
Combine the sliced pineapple and vodka in a jar with a tight fitting lid. Let sit for 1 week at room temperature, gently turning or shaking the jar occasionally.
Strain the pineapple from the vodka into another jar, pressing on the pineapple solids to squeeze out as much juice as possible. Strain the mixture several times through fine cheesecloth or a coffee filter to remove any pulp.
Combine the strained liquid with the sugar syrup. Mix well and store in a container with a tight fitting lid for a month before using the pineapple liqueur.
