Jamaican Jerk Chicken Breasts

ingredients
4 large chicken breasts
Jerk Marinade
1 onion, minced
1/2 cup scallion, chopped
2 teaspoons fresh thyme
1 teaspoon salt
2 teaspoons sugar
1 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 hot pepper, finely ground
1 teaspoon black pepper
3 tablespoons soy sauce
1 tablespoon vegetable oil
1 tablespoon white vinegar
directions
Prepare breasts and remove skin if desired. Marinade chicken for 2 to 3 hours in refrigerator.
Preheat oven to 275 degrees F. Place chicken on shallow pan and bake for 30 minutes. Remove chicken from oven and place immediately on hot grill. Grill for 5 minutes on each side, or until the skin is crispy.
For Jerk Marinade: Combine all ingredients in work bowl with steel blade. Process until finely chopped. Store excess marinade in the refrigerator for about 1 month.
