Easy Gravy Smothered Chicken

ingredients
1 tablespoon vegetable oil
1/4 cup onion, finely chopped
1/4 cup green bell pepper, finely chopped
1/4 cup celery, finely chopped
1 pound skinless whole chicken breasts or thighs
1 package mushroom gravy mix
1 can (12 ounce size) evaporated milk
directions
Heat oil over medium-high heat. Add onion, green peppers, and celery. Saute 2 minutes or until vegetables are crisp tender.
Add chicken and cook 6 - 7 minutes per side or until browned. Combine mushroom gravy and milk. Stir in chicken mixture. Bring to a boil; cover and simmer 15 minutes.
