Dove Pilau

ingredients
12 dove breasts
1/4 pound bacon, cubed
1 medium onion, chopped
5 cups chicken broth
1 pinch thyme
1 bay leaf
1/2 teaspoon salt
4 drops hot sauce (like Tabasco)
1 tablespoon parsley
1 1/2 cup rice, uncooked
1/4 pound fresh mushrooms, sliced
directions
Fry bacon over low heat in a heavy dutch oven until lightly browned. Add dove breasts and brown.
Add onion and saute until limp. Add the chicken broth and all other seasonings. Bring to a boil and add the rice.
Cover and cook over low heat about 25 minutes or until the rice is tender and the broth absorbed. Stir once with a fork. Add the mushrooms and cook 5 minutes longer.
