2 tablespoons dry bread crumbs
1 tablespoon grated Parmesan cheese
1 tablespoon paprika
1 teaspoon dried basil
1 pound perch or fish fillets of your choice
1 tablespoon butter or margarine, melted

directions

In shallow bowl, combine the bread crumbs, Parmesan cheese, paprika, and basil. Brush fish fillets with butter, then dip into the crumb mixture. Place in a greased baking pan. Bake, uncovered, at 500 degrees F for 10 minutes or until fish flakes easily with a fork.

    This is a ridiculously small amount of breading mix for one pound of fish. I doubled but probably could have quadrupled to make coating the fish more easy. I'm one who likes a thick coating on my fish, but if you are looking at it from a calorie saving point, then this is the recipe for you as the coating is very sparse, even with doubling. I did decrease the paprika as someone suggested. I used this on ocean perch we had thawed and cooked for only 5 minutes and the fillets were tiny. They weren't really crispy but they were tender and flavorful.

    fish is good. Needed more spice and less paprika. Needed Lemon Pepper for example. I will try again with Lemon Pepper. Overall good base idea.

    Easy to make and tastes good. Being a person that typically adds my own flavor to the recipe I see this as a great basic recipe to work from. It isn't too spicy or notably herb flavored - either are potential directions.

    The flavor was bland. I have used a similar recipe with chicken but it calls for dipping the meat in melted butter. I don't know if that might make a big difference as opposed to brushing.
