Slow Cooker Herb Potato Fish Bake

ingredients
1 can (10.75 ounce size) cream of celery soup
1/2 cup water
1 pound perch fillet, fresh or thawed
2 cups cooked, diced potatoes, drained
1/4 cup freshly grated Parmesan cheese
1 tablespoon chopped parsley
1/2 teaspoon dried basil
1/4 teaspoon dried oregano
directions
Combine soup and water. Pour half in slow cooker. Spread fillet on top. Place potatoes on fillet. Pour remaining soup mix over top.
Combine cheese and herbs. Sprinkle over ingredients in slow cooker.
Cover. Cook on High 1-2 hours, being careful not to overcook fish.

I made this recipe with orange roughy, and it was very tasty, but I was nervous about cooking fish in a crock pot so after it had cooked for awhile, I moved portions of it to a frying pan. Excellent taste! And very good as leftovers the next day too.
