Hamburger & Green Bean Casserole

30-60 minutes
ingredients
1 teaspoon non-stick cooking spray
1 pound ground beef
1 large onion, chopped
2 1/2 cups fresh green beans
1 can (10 ounce size) tomato soup
1/2 teaspoon salt
1/4 teaspoon black pepper
Mashed potatoes:
6 potatoes, peeled
1/2 cup skim milk, warmed
1 egg beaters 99% egg substitute, or equivalent
salt and pepper, to taste
directions
Peel potatoes and then quarter. Place in Dutch oven, cover with water and simmer until ready for mashing.
Spray skillet with Canola spray. Brown onion and then add meat and all seasonings. Cook until meat is browned throughout.
Drain off all fat. Add drained beans and soup. Pour into greased casserole dish. Top with mashed potato mixture.
Bake in 350 degrees F oven for 30 minutes

Fat-free turkey sausage works well for a meat substitute. Use 1 No. 2 can green beans if fresh aren't available. May use frozen also.
This is somewhat of a lowfat version. Use real eggs and whole milk if desired.
