This pork recipe has a delicious balance of flavors with sweet brown sugar and tangy mustard and vinegar.
2 eggs
1/4 cup prepared yellow or dijon mustard
1/4 cup packed brown sugar
1/3 cup red wine vinegar
8 pork chops, excess fat trimmed
seasoned salt, to taste
Preheat the oven to 350 degrees F. Grease a 9x13 baking dish.
In a small bowl, whisk together the eggs, mustard, brown sugar, and vinegar.
Place the pork in the baking dish and baste with the egg mixture. Sprinkle with seasoned salt.
Cover the baking dish with foil and bake for 20 minutes at 350 degrees F. Remove the foil and turn the pork chops over. Baste with the egg mixture and sprinkle with seasoned salt.
Bake the pork chops, uncovered, for another 20-30 minutes or until the pork is cooked through (actual cooking time will depend on the thickness of the pork chops).

Agree that this is an odd coating for pork chops but like the other person said, everyone loved it!

I'd never seen a coating on pork like this before. Went into it with zero expectations and was really wowed by how good it was. Will definitely make again as the entire family loved it. Rave reviews indeed.
