Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

- #13114

ingredients
4 tablespoons flour
1/2 teaspoon seasoned salt
1/4 teaspoon salt
4 pork chops
2 1/2 tablespoons melted shortening
1 1/4 cup water, divided
3/4 cup evaporated milk
directions
Combine flour and salt. Dredge chops in flour mixture, reserving remaining flour mixture for gravy.
Brown chops on both sides in hot shortening. Add 1/2 cup water; cover and simmer about 20 to 30 minutes or until tender. Remove chops from skillet.
Pour off all drippings, except about 2 tablespoons. Add 2 tablespoons reserved flour mixture to reserved drippings, blending until smooth.
Combine milk and remaining 3/4 cup water. Slowly add to flour mixture, stirring until smooth. Cook on low heat until smooth and thickened, stirring constantly. Serve gravy with chops.

Make it a little beefier by adding low sodium beef broth instead of water! Serve the pork chops on a bed of mashed potatoes (and drench it all in the gravy)

Instead of adding water, I added same amount of orange juice, no pulp. Gave it an extra kick. Gooood.
