Meaty pork chops are cooked in a tangy tomato sauce and served over rice.

4 pork chops, each about 1/2 inch thick
2 medium onions, chopped
2 celery ribs, chopped
1 large green bell pepper, seeded and chopped
1 can (14.5 ounce size) stewed tomatoes, undrained
1/2 cup ketchup
2 tablespoons cider vinegar
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon lemon juice
1 beef bouillon cube, crushed
2 tablespoons cornstarch
2 tablespoons water
Place the pork chops in the bottom of the crock pot. Sprinkle the chopped onion, celery, and bell pepper evenly over the chops.
In a bowl, mix together the tomatoes, ketchup, vinegar, brown sugar, Worcestershire sauce, lemon juice, and bouillon cube. Pour over the pork chops.
Cover the crock pot and cook on low heat for 4-5 hours or until the pork is almost cooked.
In a small bowl, whisk together the cornstarch and water until smooth. Turn the crock pot heat to high and stir the cornstarch mixture into the liquid in the crock pot. Cover the crock pot and cook for 30 more minutes or until the sauce has thickened.
Serve the pork chops and sauce over rice, if desired.

This was soooo scrumptious. I added some garlic and basil to it. It was delish. I put it over egg noodles not rice and it was a great meal.

I made this meal and it was really really good. The onions and bell peppers added great flavor, and they were very tender. My kids loved it too, surprisingly. I think it would be great with buttered egg noodles or mashed potatoes. I am going to substitute the stewed tomatoes with fire roasted tomatoes and see how it turns out.
