Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I prepared this recipe as written and it was good, but for me personally I really felt it could use a bit of kick. So I used a can of Rotel (hot) and it was just want I wanted. This one is easy to cook and allows for a bit of personalization.
