ingredients
5 large ripe tomatoes
5 stalks celery, thinly sliced
4 hard-boiled eggs, chopped
1/4 cup bottled hot pepper oil
1/4 cup white wine vinegar
salt to taste
sugar to taste
directions
Chop tomatoes in 1/2" squares. With hands, gently squeeze handfuls of tomatoes over the sink to remove some seeds and some of the juice before putting in a large bowl.
Add celery and eggs. Drizzle pepper oil and vinegar over. Add a pinch or two of both salt and sugar. Toss until coated.
Adjust seasonings and hotness to your liking. Serve immediately at room temperature.
