Frozen hash browns, cooked ham, and a creamy mustard sauce come together in this simple slow cooker recipe. Enjoy as a filling brunch or dinner option.

32 ounces frozen hash brown potatoes, partially thawed
3/4 cup chopped green bell pepper
3/4 cup chopped red bell pepper
3 cups chopped cooked ham
8 ounces package cream cheese, softened
1 1/2 cup milk
2 1/2 tablespoons Dijon mustard
1 1/2 cup chopped green onions (divided)
1/2 teaspoon garlic powder
1/2 teaspoon garlic pepper
Combine hash brown potatoes with bell bell peppers and ham in crockpot. Stir to mix. In a microwave safe bowl, blend together the cream cheese and milk. Heat in microwave oven 1 to 1 1/2 minutes or until smooth when stirred.
Stir in mustard, 1 c. of the green onions, garlic powder and pepper until blended. Pour cream cheese mixture evenly over potatoes and ham; do not mix. Cover; cook on low for 5 to 6 hours or until potatoes are tender. Stir gently. Sprinkle remaining green onions over top and serve.

My mom made this recipe the other day and it was super yummy!!! To make it more kid-friendly, she omitted the peppers and changed the green onion to fried onion and reduced it to half a cup. Other than that, we followed the recipe exactly. Fabulous! Highly recommend!!!
