ingredients
1/4 cup butter
1 cup onions, chopped
1 teaspoon salt
1/8 teaspoon black pepper
1 cup celery, chopped
1 cup hot water
1 can (15 ounce size) bean sprouts, drained
1 cup ham chunks
2 teaspoons soy sauce
1 teaspoon sugar
1/3 cup cold water
2 tablespoons cornstarch
chow mein noodles
directions
Melt butter, add onions and saute for 5 minutes. Add salt, pepper, celery and hot water. Cover and cook for 5 minutes.
Add bean sprouts and ham. Mix thoroughly and heat to boiling point. Add flavoring and thickening ingredients. Stir lightly and cook for 5 minutes.
Serve with chow mein noodles.
VARIATION: Substitute shrimp for ham.

Try the canned chop suey vegetables instead of or in addition to bean sprouts. Drain, reserving liquid, as part of the water called for. ( lo sodium canned stock will add more favor)Saute veggies with chopped onion. Add soy sauce sparingly until desired taste has been achieved.

A little bland, but not bad! We'd probably use low sodium chicken broth instead of some of the water. We'd also increase the soy sauce a little, not a lot, but it just needed "something" more. It was, however, extremely easy to throw together and was ready in about 20 minutes total.
