Tomato Paste BBQ Sauce

Thick BBQ sauce with a few tricks up its sleeve. A sweet and savory sauce perfect for slathering on chicken or ribs.

ingredients

2 tablespoons butter
1 teaspoon minced garlic
1/3 cup fine chopped onion
1 can (6 ounce size) tomato paste
1/2 cup dark brown sugar, packed
1 cup apple cider vinegar
1/2 cup ketchup
1/4 teaspoon black pepper
1/2 teaspoon salt
2 bay leaves
1/4 cup molasses
1/2 cup water
2 tablespoons lemon juice
1/4 teaspoon dry mustard
1 dash hot pepper sauce
1/4 teaspoon cayenne pepper

directions

Melt the butter in a heavy saucepan over medium heat. Add the garlic and onion and cook, stirring frequently, until soft.

Add the remaining ingredients and mix well. Bring to a boil and let cook at a boil for 3-4 minutes, stirring constantly. Reduce the heat to low. Cover the pan and let cook for one hour, stirring frequently. Remove the bay leaves.

Use the tomato paste barbecue sauce immediately or store it in a covered container in the refrigerator for up to 2 weeks.

    I needed some bbq sauce and didn't have any bottled and didn't have any regular tomato sauce but I did have paste - so I tried this. It's a very good recipe. Lots of ingredients but very little work. I still prefer the ease of opening a bottle of bbq sauce of course but if you want to make it from scratch I would recommend this recipe.
