ingredients
1 can (16 ounce size) cherries (preferably Bing cherries), in syrup
1 lemon rind, grated
1 1/2 tablespoon fresh lemon juice
1 cup granulated sugar
directions
Pour cherries with syrup into a blender and puree.
Pour puree into an enamel or tin-lined saucepan. Grate rind of lemon into pan, add sugar, and bring to boiling over high heat. Squeeze juice of lemon into pan.
Lower heat so cherry syrup won't boil over, but keep boiling slowly for 8-10 minutes until syrup has thickened.
Pour syrup into a bowl or jar. Syrup will keep refrigerated for 2-3 weeks.
