3 egg yolks
1/2 cup sugar
1 cup light cream
1 tablespoon rum
Add the egg yolks and sugar to a mixing bowl. Beat them together until they are a light lemon color.
Add the cream and beat until combined.
Place the mixture the top of a double boiler over hot, but not boiling, water. Cook the mixture, stirring constantly, until very thick.
Remove the pan from the heat and let cool. Stir in the rum when cool.
Chill the mixture completely then serve on cheesecake, cake, ice cream, or other dessert.
