It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Coconut Dipping Sauce

ingredients
1 cup coconut milk
2 cups milk
3 teaspoons all-purpose flour
1 teaspoon cinnamon (more if you like)
2 teaspoons sugar
1/4 cup toasted coconut flakes (more if you like)
directions
Combine the milks in a saucepan over medium heat until the mixture just starts to boil. Add in the flour, one teaspoon at a time, until it starts to thicken slightly.
Once it's thick like a pudding (will be a little less thick than that) add the toasted coconuts and lower the heat.
Lastly, stir in the sugar and cinnamon and add more or less to taste.
Great to use as dip on anything from fruits or my favorite coconut shrimp.

Taste as you go with the cinnamon because I only added 1/2 tsp and that was plenty. This makes a ton of dip. More than we could use with our fried shrimp. Poured some over ice cream which was tasty!

Very tasty, I also enjoyed it chilled as a nice, cool and fresh tasting pudding on a warm day. sprinkled a little cinnamon and toasted coconut on top. MMM DELISH!!
