Speedy Tuna Burgers

ingredients
1 tablespoon light mayonnaise
2 teaspoons Dijon mustard
2 egg whites
1 egg
2 green onions, minced
2 cans white tuna in water, rinsed, drained and flaked
3 tablespoons dry bread crumbs
2 tablespoons dry oats
1/4 teaspoon freshly ground black pepper
2 teaspoons vegetable oil
5 crusty whole-grain rolls
Dijon mustard, for garnish
lettuce leaves
tomato slices

Mix together the light mayonnaise, Dijon mustard, egg whites and egg with a fork or in the food processor until well-blended.
Mix in green onion, tuna, breadcrumbs and oats. Divide mixture into equal portions, shaping each into a patty.
Heat 1 teaspoon oil in a large non-stick skillet over medium-high heat. Add 3 patties and cook 4 to 5 minutes or until golden brown.
Turn burgers over and cook for another 3 to 4 minutes.
Repeat with remaining oil and patties. Serve on whole grain rolls; garnish with Dijon mustard, lettuce and tomatoes.
