ingredients
2 large skinless boneless chicken breasts, 3/4" pieces
2 potatoes, peeled, quartered lengthwise
6 cloves garlic, minced
3/4 cup low sodium chicken broth, canned
1/2 cup olive oil
1/2 cup lemon juice, fresh
2 teaspoons dried oregano, crushed
salt and pepper, to taste
directions
Preheat oven to 400 degrees F.
Arrange chicken, potatoes and garlic in a 9 x 13 glass baking dish. Season with salt and pepper. Pour broth over. Whisk olive oil, lemon juice and oregano to combine. Pour evenly over chicken and potatoes.
Bake until chicken is cooked through and golden brown, and potatoes are tender, basting occasionally with pan juices, about 30-35 minutes.

This is a wonderful recipe and so very easy. I make it every time I am cooking Chicken Breasts on the bone or boneless. I add quartered onions and other vegetables to make a complete one dish meal. I hope to make this work for 20 for a supper party.

Tried this tonight. Easy and delicious. To save calories, I cut olive oil & lemon juice to 1/4 cup and increased broth to 1 cup. Baked it for 40 min. Hubby liked it to!

Just made this tonight. Easy and delicious. To save calories, I cut the olive oil and lemon to 1/4 c each and bumped up the broth to 1 cup. Baked it for 40 min. I wasn't sure on the directions, so cut up the chicken, which I think was a good idea. Very flavorful and moist. Looking forward to enjoying the other 2 servings. Hubby says, "It's good!"

Great if you want greek chicken and potatoes and don't have 8 hours to marinate. East to make, it's all cooked in one dish and my family loved it.
