Peanut Butter Steak

30-60 minutes
ingredients
1 pound round steak, tenderized & cubed
flour, for dusting
oil for browning
2 large yellow squash sliced
1/2 bell pepper chopped
salt and pepper, to taste
1 large onion, diced
2 large potatoes, sliced
2 tablespoons (heaping) crunchy peanut butter
directions
Season steak to taste and lightly dust with flour. Brown the steak in oil. I use an iron skillet.
Make a circle with pieces of steak around edges of pan leaving middle open. Add peanut butter to middle of pan. As it begins to melt, stir to coat steak with peanut butter.
Add onion and potatoes and cook on low heat until potatoes are almost done. Add squash and continue to cook until squash is done.
Serve over wild rice if desired.
