1/2 cup chopped onion
5 slices bacon, diced
1 can (16 ounce size) sauerkraut, drained
1 can (16 ounce size) diced tomatoes, undrained
3/4 cup brown sugar
directions
Preheat the oven to 350 degrees F.
Saute onion with bacon until onion is translucent and bacon is crisp. Drain.
In a 2-quart casserole, stir together bacon mixture, sauerkraut, tomatoes and their juice and brown sugar. Bake, uncovered, about 2 hours, until the casserole is browned around the edges.
