2 cups frozen honeydew melon (not thawed)
4 tablespoons coconut cream
1 tablespoon light brown sugar
1 tablespoon fresh lime juice, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
1 teaspoon fresh lime juice
2/3 cup pineapple juice
lime slices for garnish
6 ounces rum (optional
Freeze martini glasses prior to preparing recipe.
Put all ingredients except lime slices in blender and liquefy until smooth.
Pour into glasses and garnish with lime slice.
Last summer I got the most beautiful honeydew at the farmers market. I would cut it up and put in the blender with some coconut milk and freeze it into cubes for my grandson who was teething.
I still had two batches in the freezer and was longing for that summer taste, so I came up with this. While we had it this morning at breakfast, I thought if I add some white rum it would make a lovely cocktail. So of course we had to try it, but waited until 12:01 pm. Either way, it will transport you to the tropics.
